We are lucky that our grapes don’t have to travel any distance to the winery, so we are able to press fruit in perfect condition. We tend to press the pinot noir and pinot meunier a week or two before the chardonnay, which ripens later. Everything is hand-picked and whole bunch pressed in the traditional way.
